Happy Thursday friends!
Are you one of those people that likes their morning coffee before starting the day? Me too. Except some mornings we can be racing the clock and miss our chance for that morning pick-me-up or even breakfast (GASP). However, eating coffee is always an option, right? One of my favorite breakfasts is overnight oats, you prepare it the night before and no matter how much time you have in the morning you will not be missing breakfast. In lieu of National Coffee Day this Saturday the 29th I’ve decided to throw together a coffee overnight oats recipe for you all to try!
Oatmeal is one of my favorite breakfasts, and having overnight oats is a great alternative when you want something cold or on-the-go. This is a great source of whole grains to keep you full and satisfied throughout your morning to-do’s. I like to add in chia seeds or nut butters as a great source of protein, then paired with coffee, this is the perfect breakfast to fuel a busy day.
Coffee Overnight Oats:
- ¼ – ½ cup rolled or quick oats
- 1 tbsp. instant coffee
- 1 tbsp. chia seeds
- ½ a mashed banana
- 2 tsp. Orgain vanilla protein powder
- 1 tbsp. cinnamon
- 1 tsp. vanilla extract
- ½ tsp. of stevia
- ¾ – 1 cup of unsweetened vanilla almond milk
- 1 tsp. coconut oil
Add all contents to an air tight container and mix well till all contents are combined. The mixture will have a soupy consistency at first and will thicken overnight, depending on your preference to consistency you can add more liquid in the morning and stir well. Then you are reading to go, enjoy!
